At 35,000 feet, airline meals rarely stir emotion, but Singapore Airlines has partnered with two-Michelin-starred Danish chef Søren Selin, bringing the essence of modern Danish gastronomy to its Business Class cabins on flights departing Copenhagen.

Best known as the creative force behind Copenhagen’s two-Michelin-starred Restaurant AOC, Selin now brings his signature approach to Business Class passengers departing from Copenhagen.

For years, Selin has championed a distinct style of modern Danish cuisine: ingredient-driven, seasonally attuned, and executed with quiet precision. Now, thanks to this unique partnership, travellers can experience that philosophy above the clouds.

The special menu, created exclusively for Singapore Airlines, features elegantly composed courses tailored to the unique challenges of altitude, without compromising flavour, texture, or presentation. Highlights include:

  • Slow-poached lobster with piquillo and yuzu-kosho mayonnaise, pickled butter squash, rosehip, micro-herbs, and semi-dried cherry tomatoes
  • Glazed monkfish with mussel beurre blanc, Danish potato purée, roasted and fried potatoes, smoked oil, and trout roe
  • Spring lamb with lettuce, morel sauce, and Nordic herbs (from the seasonal spring 2025 rotation)
  • Slow-cooked scallops with pickled turnip flower, a delicate starter that balances sweetness and acidity with visual elegance

Each dish is the result of close collaboration between Selin and Gate Gourmet’s Copenhagen-based culinary team, led by Executive Chef Casper Vedel.

Together, they have worked to ensure that every component, whether crisp, tender, or aromatic, retains its integrity at 35,000 feet.
