Gstaad Palace's Grand Restaurant Gets a Delicious Makeover
Le Grand Restaurant at Gstaad Palace reopens with timeless Swiss design, refined classics, and a renewed spirit of tradition.

The Gstaad Palace has unveiled a striking transformation of its iconic Grand Restaurant, marking a bold step forward while honouring over a century of tradition.
Reimagined between March and June 2025, the space now reflects a refined new identity crafted by the renowned Swiss architectural duo Fischbach & Aberegg, already celebrated for their previous redesign of the Palace’s Grande Terrasse in 2023.

This CHF 3.4 million renovation blends timeless design with a contemporary spirit. The new interiors exude understated elegance, with warm materials, tailored furnishings and subtle historical accents creating an atmosphere that feels both sophisticated and welcoming.
“This redesign opens a new chapter for our main restaurant,” says Andrea Scherz, General Manager and third-generation owner of the Palace. “Fischbach & Aberegg understood our story perfectly. We aim to evolve while staying true to our roots; both in aesthetics and in gastronomy.”
At the culinary helm, Franz W. Faeh continues to guide the Grand Restaurant’s classic philosophy. With a team of 55, the Culinary Director upholds the values of tradition, authenticity and consistency.
The refreshed menu features an impressive 75 dishes, with a focus on signature classics and tableside preparations rarely seen today.
Dishes such as Chateaubriand, Gildo’s spaghetti and flambéed crêpes Suzette are prepared directly in the dining room, offering guests both flavour and theatre.
While steeped in heritage, the Grand Restaurant remains open and inclusive. Long a favourite of local families and chalet residents, it continues to welcome the community for celebrations and fine dining alike.

Scherz, born and raised in Gstaad, emphasises the importance of this bond. “Our doors have always been open to locals. With the new design, we hope to offer an even warmer and more stylish setting for shared moments.”
Fischbach & Aberegg’s studio, founded in 1994, has become a byword for refined, emotionally intelligent design in hospitality.
With over 200 completed projects for prestigious clients, including the Hotel Grischa in Davos, Lakeview Villas on the Bürgenstock, and Zurich’s FIFA Sonnenberg Club, their aesthetic blends cosmopolitan elegance with functional beauty.
A jewel of the Swiss Alps since 1913, the Gstaad Palace remains one of Europe’s last great family-owned luxury hotels. Its 90 rooms and suites offer panoramic mountain views and a balance of Alpine charm and modern comfort.

The Grand Restaurant is now open for the summer season until 4 September 2025, and will return for winter dining from 15 December 2025 to 8 March 2026.
